Sephiroth's Last Name
I've held this in for some time, tweaking and fixing, probing where there were problems, and now, I believe I have solved it at last. I have found Sephiroth's last name, and strangely enough, it's very familiar. Valentine. Yes, that's right; our Sephy is related to the masta Vincint. You may say bullshit, or you may say "wtf mate", but either way, I'm right, and here's how.

Condition 1: Mother
Who was his mother? Lucrecia was his mother, of this I am sure (as is anyone who knows anything).

Condition 2: Lucrecia's Relation with... Who?
Lucrecia had a previous relationship with Vincint, as you find out during dialogue with Vincint and disc 3. She was either A) his wife which many believe, or B) his sister.
I say his sister because he never said they were lovers, only that they cared a lot for each other. And that could mean either one.

Condition: Lucrecia's Last Name?
Her relationship with Vincint is widely known, so her last name was Valentine, either way.

So, in my mind and in this conclusion, using Lucrecia's last name, Sephiroth, the 'God' figure's lastname, is indeed; Valentine. Welcome home, Seph. And ya tried to kill em to, heh.
